Before I address what gluten free means, I should cover what gluten is. I am not an expert, however, according to Wikipedia, Gluten is a common name for the proteins in wheat, rye, and barley. Gluten is helps foods maintain their shape, holds food together. It can be found in all types of food. Some of the obvious grains that contain gluten are:
- Wheat
- Wheat germ
- Rye
- Barley
- Bulgur
- Couscous
- Farina
- Graham flour
- Kamut Matzo
- Semolina
- Spelt
- Triticale
However you would be surprised to see all the foods, flavorings, cereals, cosmetics and medications that also include gluten. The most obvious gluten free foods belong to several naturally gluten free food groups
- Fruits
- Vegetables
- Meat and poultry
- Fish and seafood
- Dairy
- Beans, legumes, and nuts
